I don’t endorse eating in cars, because meals eaten in cars are generally made up of crappy fast food and/or eaten in such a way that you don’t even really notice what you’re eating.
I started the day with my usual first breakfast of a green smoothie, but then we were leaving on a jaunt to pick blueberries (which was a waste of time, because the berry farm that netted us 32 pounds last year was in sorry shape this year…we ended up with 4 measly pounds). I knew we would be traveling when it was time for second breakfast (yes, I’m a Hobbit, at least for the duration of the Burn the Fat challenge), so I had to assemble something to eat while enroute (note: I was not driving). My compromise breakfast was not rich in veggies per usual (usually I have an egg and some whites scrambled with a slew of veg), but it was quick, easy, portable, tasty and nutritious:
See, there’s no excuse to not eat a nutritious breakfast. This could be made even more portable by swapping out the strawberries (which required a container and a fork) for a banana, apple or orange (basically, something that comes in its own packaging. A peach would do OK, too, except you would have to be careful not to squish it, and if it’s a nice, juicy specimen, it could be messy to eat in a car.
