Meet my new love, the Pumpkin Spice Smoothie…with kale.
Yes, I know. It looks a little odd. Really, the only pretty green smoothie is one where all of the other ingredients are pale, so the pure green color shines through (but then you have to get past the fact that you’re drinking something that looks like pond scum).
My banana-berry-kale smoothies look a touch gray, and clearly the combo of green kale and orange pumpkin looks a little bleh. Or maybe just like I pureed some avocado. But it tastes like pumpkin pie! At the risk of sounding like a certain love-her-or-hate-her TV food personality, Yum-O!
My concoction is a hybrid of a few pumpkin smoothie recipes I found on line. Here’s what’s in my mix:
Carrie’s Pumpkin Spice Smoothie with Kale
1/2 cup pureed pumpkin (from a can is fine)
1 frozen banana (in chunks)
3/4 cup unsweetened vanilla almond milk
1/2 cup kale (pre-chopped to bits in my food processor)
1 tablespoon flax seed meal
1/2 scoop vanilla whey protein powder
1 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
A pinch of ground ginger
Put all ingredients in blender; blend until combined.
Now, this recipe can easily be adjusted to taste. You can leave out the kale. You can use a different milk of choice. You can use less spice. You can use less banana, less pumpkin, less liquid. Really, I saw all manner of banana-pumpkin-milk ratios, and at least one person thought those concoctions were tasty. Really, if you love pumpkin pie, you owe it to yourself to try this. It’s delicious, it’s nutritious, and it tastes like fall. What’s not to like?
