Road Food

We took advantage of my first weekend off of school to take a lil’ road trip. Being away from home is no excuse to not eat deliciously and nutritiously, to my way of thinking. We started off our morning with Oats In A Jar In A Car (photographed Hipstamatic style):

When we passed a Whole Foods, we stopped by and put together salad bar salads-to-go. This may be the best salad I’ve ever had…base of mixed greens, with shredded carrot, shredded beets, green onions (to boost flavor but not calories), grilled chicken, roasted butternut squash, blue cheese, amazing spicy pecans and a small scoop of farro (a hearty, chewy grain similar to wheat berries that is common in Italy). Fantastic!

And I finished with a spectacular Greek yogurt.

It was a lovely trip, with lovely (and yes, fast, food) but without the grease and salt overload.
