Behold the return of the green smoothie! I had sort of overdone these for a while, so not only did I become tired of smoothies, generally, but I became specifically tired of hauling out my food processor to pre-pulverize fresh kale (since I don’t have a spendy VitaMix to do my kale-chopping and smoothie-blending all in one). But that’s OK, since there are an unlimited number of other healthy produce-based meals and snacks to enjoy.
But this week, I was fully back on board with green smoothies. I washed and processed a nice, leafy bunch, enough to last me a few days, stored in the fridge in a mason jar.
Today’s smoothie was my current favorite of almond milk, vanilla whey powder, ground flaxseeds, peanut flour, banana, frozen strawberries, frozen blueberries and a few hearty scoops of kale. Yummy in my tummy! And the perfect thing after my morning weight training session in ye olde basement.
You know what else I’m excited about? Seaweed salad. Yes I am!
I’ve been trying to work more seaweed (or sea vegetables, if you prefer) into my diet, for the iodine, mostly, but hadn’t quite lived up to my intentions. So imagine, just imagine my delight when I discovered a whole seaweed salad event at my local Costco! With samples! We tasted them all, and they were all awesome (such great texture, and so flavorful), but we only brought one home. It was $10 for a 28-ounce tub, which Jeff thought was a bit spendy until I reminded him how seaweed salad would cost per pound at Whole Foods. He’s glad I insisted on adding it to our cart, because we’ve been enjoying it all weekend, and will keep enjoying it the rest of the week.
Now I’m inspired to find a recipe to make my own seaweed salad. If I find a good one, I’ll share, naturally!
