Hey, guess what? It’s National Nutrition Month! I suppose that means I’ll be writing about nutrition all month. Oh, wait…I already do that. Unless I’m slipping in a post on fitness, of course.
Of course, I personally think it should be National Nutrition Year…every year. Am I biased? Perhaps. In any case, I got this nutritious month off to a good start by buying a gignormous bag of organic baby kale at Costco. This was the first time I’ve ever seen it there, and I nearly did a happy dance in the freezing cold refrigerated produce room. I (heart) kale!
Because things are going to be crazy busy for the next week-and-a-half (one more week of class, then finals), I got my act together this weekend, in between paper writing and PowerPoint planning, and roasted a huge tray of broccoli and Brussels sprouts, cooked up a pot of wheatberries and hard-boiled some eggs. When I made steel-cut oatmeal for breakfast yesterday, I made extra. I do enjoy knowing that I have good, healthy food on hand that’s ready-to-eat or easy to assemble into a meal.
