I know I’ve mentioned the Oldways website before, but it bears mentioning again. I love that site…love it! I wish I had more time to spend mining it’s amazing depth of nutrition resources. Everyone I know who’s discovered the site can’t stop raving about it.

Most recently, my mentor, who found the “Apple-Cinnamon Oatmeal with an Egg Boost” recipe and introduced me to it. I tweaked it a bit to my tastes, and have made it every morning this week. Adding the egg to the oatmeal makes for a nice balance of carbohydrates and protein, and the texture is sort of like bread pudding. It’s very easy, very quick, very tasty and very nutritious. I hope I don’t get sick of it, a la Lucy and Ethel in the chocolate factory. Here’s my version of the recipe:

Fruity Oatmeal with Egg
Serves One

Ingredients: 
1 egg
1/3 cup milk
1/3 cup quick-cooking oats
1/4 cup berries or finely chopped apple OR 1 tablespoon dried fruit
1 teaspoon sugar (optional)
1/4 teaspoon ground cinnamon
1 teaspoon vanilla
Dash salt (optional)
1/4 cup vanilla yogurt (optional)
1 tablespoon chopped nuts or coconut flakes (optional)

Method: 
1. Beat the egg and milk in a 2-cup microwave-safe bowl until blended.
2. Stir in the oats, fruit, sugar, cinnamon, vanilla and salt.
3. Microwave on high until the liquid is absorbed and the egg is set, 1 ½ to 2 minutes.
4. Stir and top with yogurt and garnish with chopped nuts or coconut, if you wish.
